Currywurst is pan-fried sausage cut into rounds and topped with a thick tomato sauce flavored with curry powder. Make the homemade sauce with onion, tomato puree, honey, and vinegar in 20 minutes, then finish the sausage with an extra sprinkle of curry powder.
According to Berlin tradition, Herta Heuwer invented it in 1949, mixing a sauce from tomato paste and curry powder obtained from British soldiers. Serve it with a roll or fries, such as air fryer fries.

Sauté the onion
5 minFinely chop the onion and sauté it in the oil in a small saucepan until translucent.
Cook the sauce
20 minAdd the tomato paste, curry powder, and paprika and cook, stirring, for 1 minute until fragrant. Pour in the tomato puree, honey, and vinegar, add a pinch of ground chili, and simmer over low heat for 15 minutes until the sauce thickens. Season with salt and, if you prefer a smooth sauce, blend with an immersion blender.
Pan-fry the sausages
10 minMeanwhile, pan-fry the sausages in the oil for 8–10 minutes, turning until golden brown on all sides.
Serve
5 minCut the sausages into thick rounds, pour the hot sauce over them, and sprinkle with curry powder. Serve with a roll or fries.
Tip: The sauce keeps in a sealed jar in the refrigerator for 5 days. Add more ground chili for a spicier sauce or an extra tablespoon of honey for a sweeter one.
