Fučka is a traditional Slovak dish of potatoes boiled until soft, mashed right in the water they were cooked in and thickened with all-purpose flour. The thick mash is enriched with a spoonful of butter and served topped with onions fried until golden, or with bacon. Pickled cabbage goes well with it as a side. It is a simple, filling dish made from a few inexpensive ingredients.

Peel and chop the potatoes. Add just enough water to barely cover them, season with salt and boil until soft.
Peel the onions, chop them finely and fry them in a moderate amount of oil until golden brown.
Mash the cooked potatoes thoroughly right in the water they were cooked in.
Return the pot to the heat, add the butter and melt it into the mash, stirring constantly.
Add the flour and cook the mash thoroughly, stirring constantly, until it starts to puff, that is, until bubbles form and burst on the surface. Add more salt as needed.
Serve the mash as a main dish, generously topped with the fried onions, with a glass of cold soured milk (similar to buttermilk).
Tip: A mash thickened with flour scorches easily, so when you cook it through, stir with a wooden spoon all the way to the bottom of the pot. If it gets too thick, thin it with a little hot water.
