Poppy seed noodles, known in Slovak as rezance s makom, are a simple sweet dish: homemade egg noodles sprinkled with ground poppy seeds and sugar and drizzled with melted butter. They were made as a sweet lunch, in some families also on Christmas Eve.

The dough is made only from flour, eggs and salt, and the noodles are cut by hand. Similar dishes are potato šúľance with poppy seeds (hand-rolled potato noodles) or bobáľky (small baked pieces of yeast dough).

Instructions

Tip: tap a step to mark it as done.

  1. Make the dough

    20 min

Pour the flour onto a board, make a well in the center, and crack the eggs into it. Add a pinch of salt. Knead a firm, smooth dough; if it crumbles, add a tablespoon of water. Wrap it in plastic wrap and let it rest for 20 minutes.

  2. Roll out and cut

    10 min

Divide the dough into two parts and roll each one out on a floured board into a thin sheet. Let the sheets dry for 10 minutes, then roll them up and cut noodles about 5 mm wide with a sharp knife. Shake the noodles loose and dust them lightly with flour.

  3. Cook the noodles

    4 min

Bring salted water to a boil in a large pot and cook the noodles for 3 to 4 minutes, until they float to the top and are tender. Drain them.

  4. Prepare the topping

Mix the poppy seeds with the powdered sugar and melt the butter.

  5. Serve

Toss the hot noodles with half of the butter, divide them among plates, sprinkle with the poppy seed and sugar mixture, and drizzle with the remaining butter.

Tip: If you are short on time, use 400 g of store-bought wide noodles and cook them according to the package directions; the poppy seeds, sugar and butter stay the same.
