Noodles with quark and bacon are a savory version of a dish also served sweet in Slovakia. Toss wide noodles with rendered smoked bacon and sautéed onion, then add the quark (farmer's cheese) only after taking the pan off the heat. The heat of the noodles and bacon fat warms the cheese, keeping its curds intact rather than melting it. A spoonful of sour cream brings the cheese and noodles together. Ready to serve in 30 minutes.

  1. Prepare the ingredients

    5 min

Cut the bacon into small cubes and finely chop the onion. Crumble the quark with a fork and mix it with the sour cream.

  2. Cook the noodles

    10 min

Cook the noodles in salted water according to the package directions, then drain.

  3. Render the bacon

    10 min

Place the bacon in a cold skillet and cook over low heat until the fat renders and the bacon is golden brown. Add the onion and sauté until translucent.

  4. Combine

    5 min

Add the drained noodles to the skillet and toss with the bacon fat, bacon, and onion. Remove from the heat and gently stir in the quark and sour cream mixture. Do not heat again, so the cheese retains its curds. Season with pepper and sprinkle with chives.

Tip: For a sweet version, omit the bacon, onion, and pepper, toss the noodles with melted butter, and sprinkle the quark with powdered sugar. Bacon is salty, so taste the dish before adding any more salt.
