Unmolded semolina puddings with a mandarin topping are a simple dessert that appeals to kids and adults alike. Milk, fine wheat semolina (farina), powdered sugar, and vanilla sugar are cooked into a thick pudding. Orange and mandarin juice is cooked with cornstarch and sugar until thick, then poured into the bottom of glasses and topped with the pudding.
Once set, the puddings are unmolded onto plates, so the orange layer forms a cap on top. Preparation takes about 20 minutes, and the recipe serves six.

Instructions
Tip: tap a step to mark it as done.
- Cook the milk, sugar, and semolina into a thick pudding. Let cool slightly, stirring occasionally to prevent a skin from forming.
- Squeeze the juice from the fruit. Combine it with the cornstarch and sugar in a saucepan over heat and cook until thickened.
- Pour the citrus sauce into the bottom of the glasses, then layer the semolina pudding on top.
- Let the glasses chill, then gently warm them between your palms and unmold the desserts, using a small knife to loosen them if needed. Tip: For easier unmolding, lightly butter the insides of the glasses before adding the layers.
Tip: Strain the citrus juice through a fine-mesh sieve to remove seeds and pulp from the sauce. Smooth the pudding in each glass so the dessert sits level on the plate once unmolded.
