Vanilla semolina cream with butter is a simple filling for baked and no-bake desserts. Milk, semolina, and vanilla sugar are cooked into a thick porridge and left to cool. Meanwhile, an egg yolk is stirred with sugar over simmering water, then beaten with butter. The cooled semolina is added a teaspoon at a time to make a fluffy cream. Use it to fill cakes or serve it on its own with fruit and sponge cookies.

Instructions
Tip: tap a step to mark it as done.
Mix the semolina with a little of the milk and 1 tsp of the sugar. Heat the remaining milk with the vanilla sugar. When it comes to a boil, stir in the semolina mixture. Cook, stirring constantly, until a thick porridge forms.
Place the egg yolk and remaining sugar in a bowl set over simmering water and stir until thickened. Let cool slightly, then beat in the butter.
Gradually stir the cooled semolina porridge into the butter mixture, a teaspoon at a time, until the cream is fluffy.
Tip: Hold the bowl with the egg yolk over simmering water without letting it touch the water, and stir constantly; overheating the yolk will cause it to curdle into small lumps.
