Alfajores are tender sandwich cookies filled with dulce de leche, or caramelized sweetened condensed milk, with their edges rolled in shredded coconut. The tender dough, made with cornstarch, butter, egg yolks, cognac, and lemon zest, chills for an hour before being cut into 5 cm rounds and baked for about 8 minutes at 180 °C (350 °F). This recipe takes some planning because the condensed milk cooks in its can for two hours and cools overnight. The batch makes about 60 cookie rounds.

Instructions

Tip: tap a step to mark it as done.

  1. Submerge the can of sweetened condensed milk in boiling water and boil for about 2 hours. Then leave it in the water to cool overnight.

  2. The next day, mix the flour, cornstarch, salt, and baking powder. Beat the room-temperature butter with the sugar and lemon zest until the sugar dissolves, then add the egg yolks, cognac, and vanilla extract. Combine with the dry ingredients and knead into a smooth dough. Wrap in plastic wrap and refrigerate for at least 1 hour.

  3. Line a baking sheet with parchment paper. Roll out the dough on a lightly floured surface to about 0.5 cm thick. Cut out approximately 60 rounds, each 5 cm in diameter, place them on the baking sheet, and refrigerate for 20 minutes.

Preheat the oven to 180 °C (350 °F). Bake the cookies for about 8 minutes and let cool.

  4. Spread each of half the cookies with 1 tbsp of the caramelized sweetened condensed milk, then top with the remaining cookies. Roll the edges of the assembled alfajores in shredded coconut.

Tip: Keep the can fully submerged for the entire two hours, topping up with hot water as it evaporates. If the can sticks out above the water, it could overheat and burst.
