Fluffy, buttery crescent rolls filled with apricot jam are sweet yeast pastries for breakfast or a snack. The dough is made with all-purpose flour, a yeast starter, milk, eggs, and melted butter, which keeps it tender. The dough is rolled into a circle and cut into wedges, then each wedge is topped with a teaspoon of jam and rolled into a crescent.

Bake them at 180 °C (350 °F) until golden. They pair well with tea or coffee and are a favorite with children, too.

Instructions

Tip: tap a step to mark it as done.

  1. Sift the flour into a bowl to aerate it, then add the sugar. Crumble the yeast into a small bowl, sprinkle with 1 tbsp sugar, and stir into a paste. Add 1 tbsp all-purpose flour and 100 ml lukewarm milk. Once the yeast starter has doubled in volume, add it to the flour.

  2. Whisk the eggs into the milk and pour over the flour and yeast starter. Add the melted butter and knead into a dough.

  3. Let the dough rest for 10–15 minutes. Roll it into a circle, cut it into wedges, and place jam on each wedge.

  4. Roll the wedges into crescents and place on a baking sheet lined with parchment paper. Bake at 180 °C (350 °F) for about 30–35 minutes, until golden.

Tip: Let the melted butter cool to lukewarm before adding it, as hot butter would weaken the yeast starter. Place the jam near the wide edge of each wedge so it does not squeeze out as you roll it up.
