Walnut crescent rolls with plum butter are soft rolls made with chopped walnuts mixed directly into the dough. The yeast-and-butter dough is flavored with lemon zest and orange juice and needs just 15 minutes of rest before shaping. Roll it into a large circle, cut it into eight wedges, and fill each with thick plum jam flavored with a pinch of nutmeg. These crescent rolls go well with morning coffee or tea.

Instructions

Mix the yeast with 2 tbsp of the sugar and pour in 50 ml of the warm water. In a bowl, combine 100 ml of the water, 2 tbsp of the sugar, the lemon zest, orange juice, and apple cider vinegar. Stir until the sugar dissolves. Mix the flour with the baking powder and a pinch of salt.
Combine the butter with 4 tbsp of the sugar, then add both prepared mixtures, the oil, and the remaining 100 ml of water. Add the flour mixture and nuts.
Work the dough by hand on a work surface and knead until it is no longer sticky. Cover and let rest for 15 minutes.
Mix the plum butter with the nutmeg. Roll the dough into a large circle and cut it from the center into 8 equal wedges. Place some filling in the center of each wedge and roll it into a crescent.
Place the crescent rolls on a baking sheet lined with parchment paper and bake at 200°C (400°F) for 30 minutes. Then turn off the oven and leave the rolls inside to finish baking.
Tip: If the rolls brown too quickly during baking, cover them loosely with parchment paper, as the nuts in the dough burn easily. Use just a pinch of nutmeg so it does not overpower the plum flavor.
