Cocoa cookies made with lard are traditional homemade Christmas cookies that stay tender and keep well thanks to the lard. The dough is made with all-purpose flour, lard, powdered sugar, cocoa powder, and grated orange zest. Each ball of dough is given an indentation, which is filled with sour cherry or currant jam after baking.

Instructions
Tip: tap a step to mark it as done.
Make the dough
Mix the sifted flour with the cocoa powder and powdered sugar. Add the lard and grated zest from the washed orange, and quickly work into a smooth dough.
Shape the cookies
Roll the dough into a log, cut it into equal pieces, and shape into walnut-sized balls. Place them on a baking sheet lined with parchment paper and press an indentation into each one with the handle of a wooden spoon.
Bake
Bake in an oven preheated to 170 °C (340 °F) for about 15 minutes. Let the cookies cool on the baking sheet; they break easily while warm.
Fill with jam
Fill the indentations in the cooled cookies with jam.
Tip: Knead the lard dough only briefly, as the warmth of your hands softens it. If it gets sticky, refrigerate it for 20 minutes.
