This condensed milk layer cake needs no oven: cook the thin layers in a dry skillet, then stack them with a cooked butter and vanilla custard. Sweetened condensed milk gives the layers a delicate sweetness. The work takes about an hour, then the cake rests in the refrigerator, preferably overnight, so the layers can soften. If you prefer less-sweet desserts, reduce the sugar in the custard or serve the cake with black coffee.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the custard first so it has time to cool. In a saucepan, whisk the milk, eggs, flour, granulated sugar, and vanilla sugar until smooth. Cook over low heat, stirring constantly, until thickened. Stir the butter into the hot custard and let cool.

  2. For the dough, mix the sweetened condensed milk with the egg and the baking soda activated with the vinegar. Gradually work in the flour and knead into a smooth dough that is not sticky.

  3. Divide the dough into 8 pieces. Roll each piece into a thin round the size of your skillet and prick it with a fork.

  4. Cook the layers in a dry skillet over medium heat for about 1 minute per side. While still warm, trim them using a plate as a guide, then crumble the scraps.

  5. Spread custard over the layers and stack them. Cover the top and sides of the cake with custard as well, then sprinkle with the crumbled scraps. Refrigerate the cake for at least several hours, preferably overnight, to let the layers soften.

Tip: To transfer a thin layer to the skillet without tearing it, roll it around a rolling pin. Cover the cooked layers with a kitchen towel to keep them pliable until trimming.
