Instructions

Tip: tap a step to mark it as done.

  1. Whisk the eggs in a deep bowl until smooth. Add 400 ml milk, the sweetened condensed milk, sugar, and vanilla sugar, and mix thoroughly. Bring the mixture to a boil over medium-low heat, stirring constantly, then cook for about 2 more minutes, until the custard thickens slightly. Remove from the heat.

  2. For the cocoa glaze, mix 4 tbsp powdered sugar, the cocoa powder, and 180 ml milk until free of lumps. Heat, stirring constantly, until the glaze comes to a boil and is smooth. Remove from the heat and let cool.

Tip: Stir a little butter into the hot glaze to keep it from running once set.

  3. Cut the butter into small pieces and melt it in the microwave or on the stovetop. Mix it with the crushed cookies and place the mixture in the freezer for a few minutes so the butter firms up slightly and does not leak out when shaping the crust.

  4. Meanwhile, line a cake pan with parchment paper. Remove the cookie mixture from the freezer and press it into the bottom of the pan. Spread the condensed milk custard over the crust, pour the chocolate glaze over it, and refrigerate the cake for several hours, preferably overnight.

Tip: Whisk the egg custard constantly, making sure to reach the bottom of the saucepan. If lumps form, press the custard through a sieve while it is still hot.
