This honey nut cake roll with condensed milk is a quick dessert for nut lovers, ready in about 35 minutes. The sponge cake, made with a teaspoon of honey, bakes for just 10 to 15 minutes at 180 °C (350 °F). It is then spread with a cream made from caramelized Salko (sweetened condensed milk), ground nuts, honey, and cinnamon. Some of the cream is reserved for the top of the rolled cake, which you can then coat entirely in ground nuts. Honey and cinnamon give the cake a festive aroma, making it especially suited to Christmas.

Instructions

Tip: tap a step to mark it as done.

  1. Preheat the oven to 180 °C (350 °F) and line a baking sheet with parchment paper. Beat the eggs with the sugar until smooth and foamy. Stir in the honey, gradually add the flour and baking powder, and finally add the vanilla extract. Spread the batter evenly on the baking sheet and bake in the preheated oven at 180 °C (350 °F) for approximately 10–15 minutes.

  2. Mix all the cream filling ingredients in a bowl. Spread some of the cream over the baked cake, reserving the rest. Roll the cake up tightly and spread the reserved cream over the top.

If desired, coat the whole roll or individual slices in ground nuts.

Tip: Peel off the parchment paper immediately after baking while the cake is still warm; once it cools, the cake can stick to the paper and tear. Let the cream stand for a few minutes so the nuts absorb some of the condensed milk and the cream thickens.
