Gingerbread muffins with honey and almonds are fragrant treats for Christmas or any day. Honey, sugar, and Hera baking margarine are heated until melted, then flavored with gingerbread spice and ground almonds. This mixture and the eggs are incorporated into flour mixed with cocoa and baking powder, and coarsely crushed toasted almonds are added to the batter.

The muffins bake for about 20 minutes at 175°C (350°F). Decorate them however you like.

Instructions

Tip: tap a step to mark it as done.

  1. Heat the honey, rock sugar, and Hera baking margarine until everything has melted. Stir in the gingerbread spice, ground almonds, and 3 tbsp water, and let cool. Place the toasted almonds in a bag and crush them coarsely with a rolling pin.

  2. Grease a mini muffin pan with butter and preheat the oven to 175°C (350°F).

  3. Mix the flour, cocoa powder, and baking powder in a bowl. Gradually incorporate the beaten eggs and honey mixture into the dry ingredients. Set aside 3 tbsp of the crushed almonds and stir the rest into the batter.

  4. Divide the batter among the muffin cups and sprinkle with the reserved almonds. Bake for about 20 minutes.

Tip: These gingerbread muffins become even more moist the next day when stored in an airtight container; the honey keeps them soft, and the spice flavor becomes more pronounced. You can replace the Hera baking margarine with the same amount of butter.
