This creamy wild garlic soup with nutmeg features 400 g of fresh wild garlic, also known as ramsons. Briefly cook the leaves with onion and a garlic clove, add water and bouillon, and blend. Rolled oats and heavy whipping cream thicken the soup, while nutmeg adds a gently spicy aroma that mellows the garlic flavor. The recipe makes four servings.

Instructions
Tip: tap a step to mark it as done.
- Heat the butter in a pot and add the finely chopped onions and crushed garlic clove. Meanwhile, wash the wild garlic, cut it into smaller pieces, and add it to the onions and garlic.
- Cook for at least 1–2 minutes, then pour in the water and add the bouillon. Once the water is hot, add the salt, pepper, and nutmeg. Bring to a boil and blend with an immersion blender.
- Pour in the heavy whipping cream and add the rolled oats. Let the soup boil until the oats soften and break down, thickening the soup.
Tip: Grate just a pinch of nutmeg, as a whole nutmeg would overpower the soup. Do not cook the wild garlic for too long after adding it, or it will lose its bright green color and aroma.
