Cauliflower gratin with cream, Parmesan, and nutmeg is a simple baked dish that pairs cauliflower with its favorite partner, cheese. Simmer the florets in salted water and milk for five to seven minutes, then arrange them on a greased baking sheet and pour over the cream mixed with crushed garlic, nutmeg, and half the Parmesan.

Bake at 200 °C (400 °F) for ten minutes, then sprinkle with the remaining cheese and bake for another ten minutes. Serve for lunch or dinner for four.

  2. Separate the cauliflower into florets and simmer in salted water and milk for 5–7 minutes. Mix the cream with the crushed garlic, salt, nutmeg, and half the grated cheese.

  3. Drain the cauliflower well. Arrange the florets on a greased baking sheet and pour the cream mixture over them. Bake in a preheated oven at 200 °C (400 °F) for 10 minutes, then sprinkle with the remaining cheese and bake for about 10 more minutes.

  4. Tip: Substitute mozzarella for the hard cheese if desired.

Tip: Use just a pinch of freshly grated nutmeg, as too much would overpower the cauliflower's delicate flavor. Grate the Parmesan as finely as possible so it melts into the cream more quickly.
