These baked potatoes with nutmeg, garlic, and cheese are based on a recipe from Dauphiné, a historic region in southeastern France. The peeled potatoes are trimmed on one side so they sit flat, then cut lengthwise into fry-like strips without cutting all the way through. Butter, a pinch of nutmeg, garlic, salt, and pepper go into the cuts, and each potato is topped with a slice of cheese. They bake for 45 to 50 minutes at 180°C (350°F) and are served warm, sprinkled with your favorite herbs.

Instructions
Tip: tap a step to mark it as done.
Wash and peel the potatoes. Trim a thin slice from one side of each potato so it sits flat. Cut lengthwise into fry-like strips, stopping about 1 cm from the bottom so the potatoes remain intact.
Place a slice of cheese on each potato. Bake in an oven preheated to 180°C (350°F) for 45–50 minutes.
Serve the baked potatoes warm, sprinkled with your favorite herbs to taste.
Tip: If the cheese starts browning too soon, cover the potatoes loosely with aluminum foil and finish baking. Gently spread the cuts apart with your fingers before filling so the butter and garlic can reach deeper.
