Jablkové pité is a Slovak sheet-pan dessert with two layers of buttery shortcrust pastry enclosing a thick filling of grated apples and cinnamon. Sour cream makes the dough tender and easy to roll out. The bottom layer is sprinkled with ground nuts and fine wheat semolina, which absorb the apple juices so the bars hold their shape and cut neatly. Unlike a lattice-topped apple pie, it has a solid top crust that is simply pricked with a fork.

Instructions

Tip: tap a step to mark it as done.

  1. Make the dough

    10 min

Mix the flour with the powdered sugar, baking powder, and a pinch of salt. Add the cold butter, cut into cubes, and rub it into the flour with your fingertips until crumbly. Add the egg yolks and sour cream and quickly work into a smooth dough.

  2. Chill the dough

    30 min

Divide the dough into two equal portions, wrap in plastic wrap, and refrigerate for 30 minutes.

  3. Make the filling

    10 min

Peel the apples and coarsely grate them. Mix with the superfine sugar and cinnamon, let stand for 10 minutes, then drain off the released juices.

  4. Prepare the bottom crust

Preheat the oven to 180 °C (350 °F). Roll out the first portion of dough on parchment paper to fit a baking pan, about 25 × 35 cm. Transfer the dough, along with the parchment, to the pan and prick several times with a fork. Sprinkle with the ground nuts mixed with the semolina.

  5. Add the top crust

Spread the apples evenly over the nuts. Roll out the second portion of dough to the same size, lay it over the apples, gently press the edges together, and prick all over with a fork.

  6. Bake

    45 min

Bake at 180 °C (350 °F) for 40–45 minutes, until the top is light golden.

  7. Cut into bars

    30 min

Let cool in the pan for at least 30 minutes so the apple filling can set. Dust with the powdered sugar mixed with the vanilla sugar and cut into 20 pieces.

Tip: Cut the bars with a sharp knife dipped in hot water for clean edges without squeezing out the apples. Store covered in a cool place for up to 3 days.
