This simple jam cake made with margarine dough brings back childhood memories for many. The dough is divided into two portions: the smaller one goes into the freezer for an hour, while the larger one is rolled out, placed in a pan, and spread with jam or marmalade. The frozen dough is then grated evenly over the jam to create a crisp topping. The cake bakes for about 25 minutes at 190–200 °C (375–400 °F).

Instructions

Tip: tap a step to mark it as done.

  1. Melt 200 g margarine over low heat and pour it into a deep bowl. Add 2 eggs, 250 g sugar, and 1 tsp vanilla sugar.

Sift 500 g flour, mix it with 1 tsp baking powder, and gradually add it to the margarine mixture until a smooth dough forms.

  2. Divide the dough into 2 portions, one slightly larger than the other. Wrap the smaller portion in plastic wrap and freeze for 60 minutes. Roll out the larger portion thinly and transfer it to a pan greased with oil and lined with parchment paper.

  3. Spread 200 g jam or thick fruit preserves over the dough. Grate the chilled portion of dough and scatter it evenly over the entire surface.

  4. Preheat the oven to 190–200 °C (375–400 °F) and bake the cake for 25 minutes. Let it cool briefly before serving.

Tip: Leave a narrow border when spreading the jam so it does not run down against the pan and burn during baking. Grate the frozen dough directly over the cake using the coarse holes of a grater.
