Podlesníky are traditional grated potato pancakes once cooked on cabbage leaves directly on a hot stovetop. This version is baked on baking sheets in the oven. The leaves do not stick, and they give the batter a delicate, slightly sweet aroma and an imprint of their veins. Spread the batter of grated potatoes, eggs, flour, and soured milk thinly so the pancakes bake in about 30 minutes, sooner than haruľa, another Slovak potato pancake. Brush the baked pancakes with lard and serve with soured milk.

Prepare the leaves
10 minSeparate 8 large leaves from a head of white cabbage, briefly blanch them in boiling water, and pat dry. Trim down the thick central rib of each leaf so it lies flat.
Mix the batter
15 minPeel the potatoes, finely grate them, and squeeze out the water. Add the eggs, flour, soured milk, salt, marjoram, and crushed garlic, and mix into a thick batter.
Spread onto the leaves
10 minPreheat the oven to 200 °C (400 °F). Arrange the leaves on 2 baking sheets lined with parchment paper and brush them with half the lard. Spread the batter over the leaves in a layer about 1 cm thick.
Bake
30 minBake at 200 °C (400 °F) for about 30 minutes, until the batter is golden and the edges of the leaves are browned. Switch the positions of the baking sheets after 15 minutes.
Brush with lard
5 minBrush the hot podlesníky with the remaining lard, cut into squares, and serve with soured milk. Eat the cabbage leaves or set them aside.
Tip: Large, undamaged outer leaves work best; dry wet leaves thoroughly, or the batter will not brown. You can also bake the pancakes directly on parchment paper without cabbage, but the aroma will be different. Read more: Lard in the kitchen: baking and frying
