Haruľa is a traditional grated potato dish with ingredients similar to potato pancakes, but it bakes all at once in a sheet pan. In some regions, it is also called zemiaková baba. Pour the batter with garlic, marjoram, and smoked bacon into a hot pan with lard so the bottom starts sizzling right away. After 50 minutes in the oven, it is golden on top, crisp around the edges, and soft in the center. Cut it into squares and serve with soured milk, also known as clabbered milk, to drink.

Instructions

Tip: tap a step to mark it as done.

  1. Grate the potatoes

    15 min

Peel the potatoes and finely grate them along with the onion. Place the mixture in a strainer and use your hands to squeeze out most of the liquid. Discard the liquid.

  2. Mix the batter

    5 min

Cut the bacon into small cubes. Add the crushed garlic, eggs, flour, marjoram, salt, pepper, and half the bacon to the potatoes and mix well.

  3. Heat the pan

    10 min

Preheat the oven to 200 °C (400 °F). Put the lard in a baking pan measuring about 35 × 25 cm and heat it in the oven for 5 minutes.

  4. Bake

    50 min

Carefully pour the batter into the hot pan and spread it evenly to a thickness of about 2 cm. Sprinkle with the remaining bacon and bake at 200 °C (400 °F) for about 50 minutes, until golden on top and crisp around the edges.

  5. Cut into squares

    5 min

Let rest for 5 minutes, cut into squares, and serve with soured milk or sour cream.

Tip: Squeeze as much water as possible out of the potatoes, or the center will be gummy. For a version without bacon, top with sautéed onions; cold leftovers can be pan-fried the next day. Read more: Lard in the kitchen: baking and frying
