Rašelina cake has two layers of cocoa crumbs made with semi-coarse wheat flour, butter, sugar, and cocoa, with a thick quark (farmer's cheese) filling baked between them. The filling combines quark, sour cream, eggs beaten with sugar, vanilla, and starch. The crumbs are made by hand, with no rolling required, and the cake bakes for about an hour at 180 °C (350 °F). Its name means “peat,” a reference to the dark, crumbly layer on top.

Crumb mixture
Mix the flour, sugar, vanilla sugar, and cocoa powder in a bowl. Add the butter, cut into pieces, and rub it into the flour mixture with your hands until crumbly.
Filling
Beat the eggs with the sugar until foamy. Mix the quark with the sour cream, vanilla, and starch, then fold in the beaten eggs.
Bake
Line a baking pan about 24 cm in diameter with parchment paper. Add half the crumb mixture and press it down lightly. Pour the quark filling over it and cover with the remaining crumbs. Bake in an oven preheated to 180 °C (350 °F) for about 60 minutes.

Tip: Let the cake cool in the pan, as the warm filling will run when sliced. It tastes best the next day, chilled from the refrigerator.
