Spaghetti with garlic, olive oil, and Parmesan is a simple, aromatic pasta dish that comes together quickly. Start the sliced garlic in cold oil and heat it slowly so it doesn't burn and turn bitter. Toss the cooked spaghetti with the garlic oil, red pepper flakes, parsley, and finely grated Parmesan. A little pasta cooking water helps the sauce coat every strand.

Instructions
Tip: tap a step to mark it as done.
Cook the spaghetti in boiling salted water.
Meanwhile, place the oil and thinly sliced garlic in a large skillet over low heat. Add the garlic to the oil right at the start and heat slowly so it doesn't burn and turn bitter.
Before draining, reserve about 200 ml of the pasta cooking water. Return the drained spaghetti to the pot, pour the garlic oil with red pepper flakes over it, add the chopped parsley and finely grated Parmesan, and toss thoroughly. If the cheese sauce doesn't coat all the pasta, add a few tablespoons of the reserved cooking water.
Taste, add more salt if needed, and serve.
Tip: Add the red pepper flakes to the oil only during the last minute, when the garlic starts to turn golden; heating them longer could burn them and make them bitter. If the garlic browns too quickly, immediately remove the pan from the heat.
