These meatballs are wrapped in thin slices of bacon that shrink and turn golden as they bake. The meat mixture includes sautéed onion, a bread roll soaked in milk, an egg, grated cheese, and chopped olives, which can be left out. The bacon is secured with toothpicks, and the meatballs bake for 25–30 minutes. Serve with mashed potatoes, bread, or vegetables.

Onion
Finely chop the onion and sauté it in the oil until translucent. Soak the bread roll in the milk, then gently squeeze out the excess.
Meat mixture
Add the sautéed onion, crumbled bread roll, egg, finely grated cheese, and finely chopped olives to the ground meat. Season with salt and pepper and mix thoroughly.
Shape the meatballs
With wet hands, shape the meat mixture into about 12 balls. Wrap each one in a slice of bacon and secure with a toothpick.
Bake
Place the meatballs in a baking dish or on a baking sheet lined with parchment paper. Bake in an oven preheated to 190 °C (375 °F) for 25–30 minutes, until the bacon is golden. Remove the toothpicks before serving.
Tip: Shape the meatballs with wet hands to keep the mixture from sticking. For crispier bacon, turn on the broiler for the last five minutes.
