These tender Christmas crescent cookies are made with Palmarin (solid vegetable shortening), powdered sugar, and all-purpose flour. The dough is piped from a pastry bag rather than rolled out. Half the shortening is melted and poured into the remaining shortening mixed with sugar, making the dough soft enough to pipe right away. Once baked, the cookies are sandwiched in pairs with jam, then dipped at one end in chocolate melted with butter.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the shortening

Melt 250 g of the Palmarin in a small saucepan and let cool slightly. Mix the remaining 250 g of Palmarin with the powdered sugar in a bowl, then slowly pour in the melted shortening, stirring constantly.

  2. Make the dough

Add the sifted all-purpose flour and mix with a wooden spoon to form a soft dough. Immediately transfer it to a pastry bag fitted with a star tip.

  3. Pipe the cookies

Pipe crescents about 5 cm long onto a baking sheet lined with parchment paper, leaving small gaps between them.

  4. Bake

Bake one sheet at a time in an oven preheated to 185 °C (365 °F) for 10–12 minutes, until the edges begin to turn light golden. Let cool on the baking sheet; the cookies break easily while warm.

  5. Sandwich with jam

Spread a thin layer of jam on the flat underside of half the cookies, then top with the remaining cookies.

  6. Dip in chocolate

Melt the chocolate and butter together in a bowl set over simmering water. Dip one end of each sandwiched cookie into the chocolate and let set on parchment paper.

Tip: Pipe the dough while it is soft; once it cools, it will firm up and become too stiff to pipe. If this happens, briefly knead it with warm hands.
