Chocolate cake with quark filling and cherry sauce is a moist dessert with a layer of quark (soft curd cheese) and mascarpone cream tucked inside cocoa batter. Two-thirds of the batter is spread in a greased baking pan, followed by the filling thickened with pudding mix and the remaining batter. The cake bakes for about 40 minutes at 190 °C (375 °F).

Before serving, pour the sweet sauce made with cherries, lemon juice, and sugar over the cake and garnish with fresh mint leaves.

Instructions

Tip: tap a step to mark it as done.

  1. For the batter, combine the semi-coarse wheat flour, all-purpose flour, baking powder, and cocoa powder in a bowl. In another bowl, beat the eggs with the granulated sugar and vanilla sugar. Gently fold in the dry ingredients, melted and cooled butter, grated chocolate, and milk. Mix everything together well.
  2. For the filling, mix the powdered sugar and vanilla sugar with the egg and Zlatý klas pudding mix in a bowl. Then add the quark and mascarpone.
  3. Preheat the oven to 190 °C (375 °F). Grease a small baking pan with butter and dust with flour. Spread 2/3 of the batter in the pan, add a layer of quark filling, and spread the remaining batter on top. Bake for approximately 40 minutes.
  4. For the sauce, wash and pit the cherries, removing any stems as needed. Combine them in a saucepan with the granulated sugar, vanilla sugar, and lemon juice. Add some water and cook for about 10 to 15 minutes.

Tip: Cook the sauce only until slightly thickened; it will thicken further as it cools. You can also make it with pitted sour cherries instead of sweet cherries, adding a little more sugar.
