This vegetable omelet with cheese, corn, and tomatoes gets its fluffy texture from beaten egg whites folded with yolks and grated cheese. Briefly sautéed vegetables, such as scallions, tomatoes, or corn, are scattered over the omelet in the skillet. Once cooked, it is folded in half and sprinkled with chives. Choose vegetables to suit the season. Six eggs make four omelets for breakfast, lunch, or dinner.

Instructions
Tip: tap a step to mark it as done.
Add the diced tomatoes (or red bell pepper) and sliced scallions to hot olive oil. Season with salt or a roasted vegetable seasoning blend and sauté briefly. Add the drained corn at the end.
Separate the egg whites from the yolks. Beat the whites with an electric mixer until stiff peaks form.
Gradually fold the yolks and grated cheese into the beaten egg whites. Pour ¼ of the mixture into a skillet with hot oil, reduce the heat, scatter some of the vegetables over the top, and cover with a lid. Cook for about 10 minutes, until the bottom is golden and the top is set. Fold the cooked omelet in half and sprinkle with chopped chives. Prepare the remaining omelets the same way.
Tip: Let the sautéed vegetables drain briefly before scattering them over the omelet, as the tomato juices would make it soggy. Fold the omelet right away while it is still soft and flexible, or it will crack.
