These fragrant Christmas cookie sticks are made with cocoa dough, ground nuts, a pinch of ground cloves, and lemon zest. Roll out the dough, spread it with an egg white and lemon juice glaze, then cut it into sticks with a pastry wheel. Bake them slowly at a low temperature so the glaze stays pale and crisp.

Dough
Work the flour, butter, powdered sugar, ground nuts, egg, cocoa powder, ground cloves, and grated lemon zest into a smooth dough.
Glaze
Stir the egg white with the sifted powdered sugar and lemon juice until the glaze is thick and glossy.
Shape the sticks
On a floured work surface, roll out the dough to about 5 mm thick. Spread the glaze evenly over it, then use a pastry wheel or a knife dipped in water to cut it into sticks about 2 × 6 cm. Place them on a baking sheet lined with parchment paper.
Bake
Bake slowly in an oven preheated to 160 °C (325 °F) for 15–20 minutes, until the glaze is set and the edges of the cookie sticks are baked through.
Tip: Dip the knife or pastry wheel in water after each cut to keep the glaze from dragging. If the glaze starts to brown during baking, reduce the temperature to 150 °C (300 °F).
