In Slovakia, goose liver with onions and apples is part of the St. Martin’s Day table, alongside roast goose and lokše, thin potato flatbreads. The liver is pan-fried in butter until golden on the outside and cooked through, the onions are slowly cooked until golden, and tart apples add juiciness. Salt is added only at the end. Serve with potato flatbreads, bread, or mashed potatoes.

Instructions
Tip: tap a step to mark it as done.
Prepare the liver
Pat the liver dry with a paper towel. Trim away any veins, membranes, and greenish areas stained by bile, then cut into large pieces about 6 cm long and 2 cm thick.
Cook the onions
10 minCut the onions into thin wedges. Melt half the butter in a skillet and cook the onions over low heat, stirring occasionally, for 10 minutes until golden. Transfer to a plate.
Cook the apples
3 minWash and core the apples, then cut them into wedges. Cook in the same skillet for 3 minutes until softened but still holding their shape, then transfer to the plate with the onions.
Cook the liver
6 minHeat the remaining butter in the skillet and cook the liver over medium-high heat for 3–4 minutes per side, until cooked through in the center and no pink juices run out when cut.
Season
1 minReturn the onions and apples to the skillet with the liver, sprinkle with marjoram, season with pepper, and heat together for 1 minute. Add salt just before serving.
Serve
Serve immediately with lokše (thin potato flatbreads), bread, or mashed potatoes.
Tip: Do not crowd the pieces of liver in the pan, or they will steam in their own juices instead of browning. Duck liver can be prepared the same way.
