This sweet, flourless buckwheat bake with quark and apples works well for lunch or breakfast. Cook the buckwheat in milk, mix it with quark (farmer's cheese), eggs, and sugar, then layer it with grated apples and cinnamon and bake. The buckwheat gives the dish a mild, nutty flavor.

Serve warm with yogurt or a teaspoon of honey.

Instructions

Tip: tap a step to mark it as done.

  1. Cook the buckwheat in milk

Rinse the buckwheat in a strainer under cold water. Place it in a pot, pour in the milk, add the salt, and bring to a boil. Cover and cook over low heat for 15 minutes, stirring occasionally, until the milk is absorbed. Let cool for 10 minutes.

  2. Prepare the apples

Peel the apples, grate them coarsely, and toss with the cinnamon. If they release a lot of juice, squeeze them gently to remove some of it.

  3. Mix the quark

Preheat the oven to 180 °C (350 °F). Mix the quark with the eggs, granulated sugar, vanilla sugar, and melted butter until smooth. Stir in the buckwheat and raisins.

  4. Assemble the layers

Grease a baking dish measuring about 20 × 25 cm with butter. Spread half of the buckwheat mixture in the dish, distribute the apples over it, and cover with the remaining mixture. Smooth the top.

  5. Bake

Bake for 35–40 minutes, until the top is golden and the center feels firm to the touch. Let stand for 10 minutes so it can be sliced, then serve warm.

Tip: Use a tall pot to cook the buckwheat in milk, and stay by the stove until the milk comes to a boil—it can easily boil over and burn onto the stovetop.
