Braised white cabbage with caramelized sugar is a sweet-and-sour side dish made with fresh cabbage, served with duck, goose, or roast pork. First, caramelize the sugar in lard, then braise the cabbage with onion and caraway until tender and finish with vinegar. It pairs well with Slovak steamed dumplings or lokše, thin Slovak potato flatbreads.

Instructions

Tip: tap a step to mark it as done.

  1. Slice the cabbage

Remove the outer leaves from the cabbage, cut it into quarters, remove the core, and slice into thin strips. Finely chop the onion.

  2. Caramelize the sugar

Melt the lard in a wide pot and add the sugar. Cook over low heat, stirring constantly, until the sugar melts and caramelizes to a golden color. Immediately add the onion and sauté briefly in the caramel.

  3. Braise the cabbage

    40 min

Add the cabbage, caraway seeds, and salt. Stir, pour in the water, and cover. Braise over low heat for 35–40 minutes, until tender. Stir occasionally and add a little water as needed.

  4. Season to taste

    5 min

Sprinkle the flour over the cabbage, stir, and pour in the vinegar. Simmer for 5 minutes, until the cooking liquid thickens. Adjust the salt, sugar, or vinegar to give the cabbage a pleasantly sweet-and-sour flavor.

  5. Serve

Serve warm with duck, goose, or roast meat, alongside Slovak steamed dumplings or lokše.

Tip: Caramelize the sugar only until golden; dark caramel would make the cabbage bitter. For sweeter cabbage, add one grated apple at the end.
