Tekvicový prívarok is a mild, creamy Slovak dish made with shredded pumpkin and sour cream, especially suited to fall. Shred the pumpkin and salt it; it will release enough juice that no water is needed. Thicken it with sour cream mixed with flour to keep the sour cream from curdling during cooking. Add the dill only after removing the pot from the heat to preserve its aroma. Serve with a sunny-side-up egg, boiled potatoes, or a ground meat patty.

Instructions

Tip: tap a step to mark it as done.

  1. Shred the pumpkin

    10 min

Peel the pumpkin, remove the seeds, and shred it using the coarse holes of a grater. Toss with the salt and let stand for 10 minutes, until it starts releasing its juices. Do not drain.

  2. Sauté the onion

    5 min

Finely chop the onion and sauté it in the butter in a wide pot until translucent.

  3. Simmer

    15 min

Add the pumpkin along with its juices and stir. Cover and simmer over low heat for 15 minutes, stirring occasionally. The pumpkin should be tender but still hold its shape. Do not add water.

  4. Thicken

    5 min

Whisk the sour cream and flour together until smooth, then pour into the pumpkin. Simmer for 5 minutes, stirring constantly.

  5. Season

Remove the pot from the heat. Add the vinegar, sugar, ground black pepper, and dill. Stir and add more salt to taste.

Tip: Zucchini also works, but it contains more water, so squeeze it gently before simmering. The dish thickens as it cools; thin it with a tablespoon of water when reheating.
