These pork patties with carrots and eggs are baked in the oven, so there is no need to fry them in oil. The ground pork is mixed with milk-soaked bread, eggs, and onion sautéed with grated carrots, which help keep the patties juicy. A well is made in the center of each patty and an egg is cracked into it. The patties bake for 40 to 45 minutes at 180–190 °C (350–375 °F), and the recipe makes six servings.

Instructions

Tip: tap a step to mark it as done.

  1. Peel and grate the carrots. Tear or cut the bread into small pieces, pour the milk over it, and mash into a paste. You can also pass it through a meat grinder.

  2. Finely chop the onion and sauté it in a little oil until golden. Add the carrots and cook briefly together. Let the mixture cool slightly. Gently squeeze the excess milk from the bread, then combine the bread, onion-carrot mixture, and remaining ingredients with the ground pork. Mix until smooth and season with salt and pepper.

  3. Shape the mixture into patties and place them on a baking sheet greased with lard. Make a well in the center of each patty. Crack one egg into each well and add a little salt and pepper.

  4. Bake the patties in an oven preheated to 180–190 °C (350–375 °F) for a total of 40–45 minutes. For the last 10 minutes, increase the temperature to 220 °C (425 °F) and bake until golden brown.

Tip: Make the wells deep enough, using the bottom of a small glass, for example. Crack each egg into a cup first, then pour it into a well to keep the yolk intact and prevent the white from spilling onto the baking sheet.
