This pull-apart bread is a whole loaf cut in a crosshatch pattern, spread with garlic butter, and stuffed with cheese, bacon, smoked meat, and sautéed onion. It is wrapped in foil and baked for about half an hour, then unwrapped, brushed with the remaining butter, and baked again. Serve the loaf whole, topped with scallions, so everyone can pull off pieces.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the onion and butter

Thinly slice the onion and sauté it in the oil until golden. Mix the melted butter with the crushed garlic and salt.

  2. Cut the bread

Using a sharp serrated knife, cut the top of the loaf in a crosshatch pattern to form roughly 2.5 cm squares. Do not cut all the way through the bottom crust, so the loaf stays together.

  3. Fill the loaf

Spread about two-thirds of the garlic butter into the cuts, sprinkle in the sautéed onion, and tuck in pieces of cheese, bacon, and smoked meat.

  4. Bake

Wrap the loaf in aluminum foil and bake in an oven preheated to 180 °C (350 °F) for about 30 minutes. Unwrap it, brush with the remaining garlic butter, and bake for about 10 more minutes, until the cheese begins to turn golden. Sprinkle with chopped scallions and serve warm.

Tip: Day-old bread is easiest to cut, as fresh bread tends to tear under the knife. Cut the cheese into thin slices so they slide into the cuts more easily.
