This baked zucchini roll with ham, Gouda and mozzarella is made with thin zucchini slices coated in a thick batter of flour, egg and milk. The coated slices are brushed with oil and left to drain on paper towels, then arranged in a baking dish and layered with ham and two kinds of cheese. Once rolled up and covered with aluminum foil, they bake for about 20 minutes at 180 °C (350 °F). Seasonal zucchini pairs well with cheese, making this a dish for lunch or dinner that's ready in 40 minutes.

Instructions
Tip: tap a step to mark it as done.
Whisk together the flour, egg and milk to make a batter slightly thicker than crêpe batter, and season with salt and pepper. Cut the zucchini into thin slices, coat each slice in the batter and brush with oil.
Place the slices on paper towels to absorb the excess oil.
Arrange a layer of zucchini in a baking dish, top with the ham, Gouda and mozzarella, and roll up the zucchini slices. Cover the dish with aluminum foil and bake at 180 °C (350 °F) for about 20 minutes. Serve once cooled.
Tip: Slice the mozzarella ahead of time and let it drain in a strainer; otherwise, it will release water in the oven and make the roll soggy. Slice the zucchini lengthwise, as long slices are easier to roll up.
