This flourless cauliflower roll with ham and mozzarella uses a sheet of finely processed cauliflower, egg, and mozzarella instead of dough. The cauliflower is briefly boiled and thoroughly squeezed dry, then the oregano-seasoned mixture is baked for exactly 10 minutes at 220 °C (425 °F). The sheet is then spread with tomato puree, topped with ham or another sausage or cured meat and cheese, and rolled up. Serve it as a light dinner or a savory snack for guests.

Instructions

Tip: tap a step to mark it as done.

  1. Wash the cauliflower, break it into smaller pieces, and pulse in a food processor until it resembles couscous. Bring salted water to a boil in a deep skillet or pot, add the cauliflower, and cook for about 3–4 minutes. Drain through a fine-mesh strainer and press with a spoon to squeeze out excess water.

  2. Dry the drained cauliflower further with a kitchen towel, then add the egg and grated mozzarella and mix well. Spread the mixture on a baking sheet lined with parchment paper, sprinkle with oregano and black pepper, and bake at 220 °C (425 °F) for exactly 10 minutes.

  3. While the cauliflower sheet bakes, prepare the filling ingredients: grate the cheese, slice the ham, and prepare the remaining ingredients.

  4. Lift the cauliflower sheet off the baking sheet, leaving the parchment underneath, and let cool slightly. Spread with tomato puree, sprinkle with oregano, and arrange your preferred filling ingredients on top.
  5. Roll up the cauliflower sheet using the parchment to help, then remove the paper. Score the roll with a sharp knife, sprinkle with grated Parmesan and oregano, and bake for another 12 minutes. Serve the baked roll.

Tip: Spread a thin layer of tomato puree over the sheet, leaving a strip uncovered along the far edge so the filling does not squeeze out as you roll and the sheet does not become soggy.
