This cauliflower casserole with ham and eggs is a variation on francúzske zemiaky, a Slovak potato casserole, with cauliflower florets replacing the potatoes. The cauliflower is first parboiled in salted water, then arranged with ham in a baking dish greased with melted butter. Eggs whisked with sour cream are poured over everything, and the casserole is baked for about 30 minutes at 180°C (350°F). It is easy to prepare and serves four.

Instructions

Preheat the oven to 180°C (350°F).
Break the cauliflower into florets and boil them in salted water.
Heat a little oil in a skillet and melt the butter in it over low heat. Pour the melted butter into a baking dish or rimmed baking sheet and arrange the parboiled cauliflower in it.
In a bowl, whisk the whole eggs with the sour cream and a pinch of salt to taste. Add the ham cut into wide strips, or sausage cut into rounds.
Mix thoroughly and pour the mixture over the prepared cauliflower. Bake at 180°C (350°F) for about 30 minutes, until the top is crisp and golden.
Tip: Boil the florets for just a few minutes, until a knife slides in with slight resistance. They will soften further in the oven without turning mushy under the egg mixture.
