This Christmas mascarpone cake has dark layers flavored with honey and gingerbread spice, filled with lingonberry jam and white mascarpone whipped cream frosting. You don't need to smooth the frosting perfectly: gentle swirls topped with sugar-dusted cranberries create a snowy effect. The cake needs at least 4 hours in the refrigerator, so you can make it a day ahead. A 20 cm cake makes 12 slices.

Instructions

Bake the cake
40 minPreheat the oven to 170 °C (340 °F) and line a 20 cm cake pan with parchment paper. Beat the eggs, sugar, and honey until thick and foamy. Sift together the flour, cocoa powder, gingerbread spice, and baking powder, then gently fold into the egg mixture. Bake for 30 minutes, until a skewer inserted into the center comes out dry.
Let cool
1 hrLet the cake cool completely, then cut it horizontally into three layers.
Whip the frosting
10 minBeat the cold mascarpone with the powdered sugar and vanilla sugar. Pour in the cold cream and beat until the frosting thickens and holds its shape. Do not overbeat, or it may curdle.
Assemble the cake
20 minSpread half the jam and one-third of the frosting over the bottom layer. Add the second layer and repeat. Add the top layer and spread the remaining frosting over the top and sides. Gently swirl the surface with a spoon; it doesn't need to be smooth.
Decorate and chill
4 hr 10 minArrange the cranberries on top and dust them with powdered sugar. Refrigerate the cake for at least 4 hours to let the frosting set and the cake layers soften.
Tip: The mascarpone and cream must be cold, straight from the refrigerator, or the frosting won't hold its shape. Thaw frozen cranberries first and pat them dry so they don't stain the frosting. Read more: How to adjust a recipe for your baking pan
