These coconut-pineapple dessert cups combine coconut pudding, mascarpone cream, and juicy pineapple. Stir shredded coconut into hot vanilla pudding, then divide the pudding among glasses. Once cool, top with a cream made from mascarpone, smooth quark (a soft curd cheese), lemon juice, and pineapple juice, followed by pineapple pieces and whipped cream. Sprinkle lightly toasted coconut flakes on top. This dessert is suitable for celebrations or an ordinary Sunday afternoon.

Instructions

Tip: tap a step to mark it as done.

  1. Coconut pudding: Cook the milk, pudding mix, and sugar into a pudding, then stir in the coconut while the pudding is hot. Divide among glasses. If desired, add a layer of pineapple at the bottom of the glasses or on top of the pudding.

Tip: You can first pour boiling water over the coconut, let it stand for about 20 minutes, then drain before adding it to the pudding.

  2. Cream filling: Beat the mascarpone with the juice from the canned pineapple and the lemon juice. Add vanilla extract or powdered sugar to taste, then gently fold in the smooth quark. Layer the filling over the cooled coconut pudding.

  3. Arrange pineapple rings or pieces over the cream layer and decorate with whipped cream. Sprinkle lightly toasted coconut flakes on top.

Tip: Toast the coconut flakes in a dry skillet, stirring constantly, as they can go from golden to burned in just a few seconds. Let them cool on a plate, not in the skillet.
