Fried cheese is a classic in Slovak cafeterias and home kitchens: thick slices of Edam coated in flour, egg, and breadcrumbs, then fried until golden. The cheese gets a double coating and a brief chill in the freezer before frying to keep it from leaking out. Serve it hot with boiled potatoes and tartar sauce.

Instructions

Tip: tap a step to mark it as done.

  1. Boil the potatoes

    20 min

Peel the potatoes and cut any larger ones in half. Boil in salted water until tender, about 20 minutes. Meanwhile, prepare the cheese.

  2. Slice and bread the cheese

    15 min

Cut the Edam into 8 slices about 1.5 cm thick. Beat the eggs with the milk and a pinch of salt. Place the flour and breadcrumbs in separate shallow dishes. Coat each slice in flour, then egg, then breadcrumbs. Dip it in egg and breadcrumbs once more, and press the coating firmly with your palms, including along the edges.

  3. Chill until firm

    15 min

Place the breaded cheese on a plate and freeze for 15 minutes. Chilling keeps the cheese from melting out before the coating turns golden during frying.

  4. Fry the cheese

    10 min

Heat about 1 cm of oil in a skillet. Fry the cheese in batches of two to three slices over medium heat for about 2 minutes per side, until golden. Drain on a paper towel.

  5. Serve

Serve the cheese immediately, while the center is still soft, with the boiled potatoes and tartar sauce.

Tip: Choose Edam with 30% fat in dry matter for frying; higher-fat cheese melts faster and is more likely to leak out. If the coating tears anywhere, patch the spot with another coating of egg and breadcrumbs.
