This homemade tartar sauce is made in a blender with hard-boiled eggs instead of raw yolks. Blend the hard-boiled eggs with milk, finely chopped cucumber and onion, mustard, and vinegar. Add the oil a little at a time while blending; the amount determines how thick the sauce will be. Season with salt, pepper, and a pinch of sugar only at the end. Serve with fried cheese, breaded cutlets, or French fries.

Instructions
Tip: tap a step to mark it as done.
- Hard-boil the eggs and finely chop the cucumbers and onion. Place all the ingredients except the oil in a blender and blend into a paste.
- With the blender running, gradually add the oil a little at a time, using enough to reach your desired sauce thickness. Adjust the seasoning only at the end.
Tip: Cool the boiled eggs immediately in cold water to make them easier to peel and keep the yolks from turning green. If raw onion is too sharp for your taste, pour boiling water over the chopped onion and drain.
