Shelled nuts stored in canning jars will not go rancid if they are thoroughly dry, tightly sealed, and kept cold. Before filling the jars, discard any darkened or moldy nuts, then seal the jars and store them in the refrigerator or freezer. According to the National Center for Home Food Preservation (NCHFP), nuts retain their quality for one year in the refrigerator and one to three years in the freezer, depending on the type. Heat and light make the oils in nuts turn rancid sooner; there is no need to process them in the oven.

Tip: tap a step to mark it as done.
Inspect the shelled nuts and discard any darkened, moldy, or rancid nuts, along with any remaining shell fragments. Put only thoroughly dry nuts in the jars; damp nuts would become moldy in a sealed jar.
Fill clean, dry canning jars with the nuts and tighten the lids securely to keep out air, moisture, and odors.
Store the jars in the refrigerator or freezer. According to the National Center for Home Food Preservation (NCHFP), nuts retain their quality for one year in the refrigerator at 0–7 °C (32–45 °F) and one to three years in the freezer, depending on the type of nut. At room temperature, the oils in nuts turn rancid sooner, so keep only a small amount out for everyday use.
Do not dry-can nuts in an oven or microwave, as was once recommended. The U.S. Department of Agriculture (USDA) does not recommend oven canning and has never had a validated canning procedure for shelled nuts alone, according to the NCHFP. Cold storage and a tightly sealed jar protect nuts better.
Tip: Divide the nuts among smaller jars so you only open as much as you will use at one time, since each opening exposes them to air and moisture.
