These puffed rice “hedgehogs” are a retro no-bake treat made with puffed rice and homemade caramel. Granulated sugar is melted into caramel and briefly cooked with sweetened condensed milk. After removing it from the heat, Hera baking margarine and two packets of puffed rice are stirred in. The warm mixture is shaped into balls with a wet spoon or wet hands, then left to set in a cool place. The balls resemble little hedgehogs.

Instructions
Tip: tap a step to mark it as done.
Caramel
Melt the granulated sugar in a wide saucepan over low heat, stirring constantly, until it turns a light caramel color.
Milk
Carefully pour in the condensed milk (the caramel will bubble up), stir, and cook briefly until the caramel dissolves. Remove from the heat.
Puffed rice
Stir the Hera baking margarine into the hot mixture. Once it has melted, gently fold in the puffed rice until evenly coated.
Hedgehogs
Shape the warm mixture into balls using a spoon dipped in cold water. If shaping by hand, dip your hands in cold water. Place the balls on parchment paper and leave to set in a cool place.
Tip: Do not let the caramel get too dark, or it will turn bitter. The mixture sets quickly, so shape the balls right away, taking care as it is still hot.
