Millionaire's shortbread is a British classic with three layers: a tender crust made with butter, flour, and sugar, caramel cooked with butter, sugar, syrup, and sweetened condensed milk, and dark chocolate on top.

Once the caramel comes to a boil, keep stirring until it thickens so it won't run out when you cut the bars. Cut into 24 squares.

Instructions

Tip: tap a step to mark it as done.

  1. Bake the crust

Preheat the oven to 160 °C (325 °F), or 140 °C (285 °F) for a fan oven (convection). Lightly grease a baking pan about 20 × 30 cm. Mix the flour, sugar, and butter into a smooth dough, press it evenly over the bottom of the pan, and prick with a fork. Bake for 35–40 minutes until golden, then let cool.

  2. Cook the caramel

Heat the butter, sugar, syrup, and condensed milk over low heat until the butter melts. Bring to a boil and cook, stirring constantly, until the mixture thickens. Pour over the cooled crust.

  3. Add the chocolate topping

Melt the chocolate in a bowl set over a pan of simmering water, spread it over the caramel, and let set. Cut into 24 equal squares.

Tip: Let the chocolate just begin to set, then score it into 24 squares with the tip of a knife while it is still soft. Once fully set, cut along the scored lines to keep the hard chocolate from cracking over the caramel.
