Bounty coconut bars have a cocoa sponge cake base, a thick filling of shredded coconut and sweetened condensed milk, and a layer of dark chocolate. Bake only the cake base; briefly warm the filling in a saucepan, then let it set in the refrigerator. Their flavor and ingredients are reminiscent of the familiar Bounty coconut candy bar. Unlike coconut squares with a cooked cream filling and a plain cake base, these have a filling without flour or milk; unlike no-bake bars, they have a sponge cake base. One pan makes 24 bars.

Instructions

Tip: tap a step to mark it as done.

  1. Bake the sponge cake

    25 min

Preheat the oven to 180 °C (350 °F) and line a 25 × 35 cm baking pan with parchment paper. Beat the egg whites with the sugar until stiff peaks form, beat in the yolks, then gently fold in the flour sifted with the cocoa powder and baking powder. Bake for about 15 minutes and let cool.

  2. Make the filling

    10 min

Heat the condensed milk and butter in a saucepan over low heat until the butter melts. Remove from the heat and stir in the shredded coconut. Let stand for 5 minutes so the coconut can absorb the liquid.

  3. Spread and chill

    1 hr

Spread the filling over the cooled sponge cake, cover with parchment paper, and smooth it with your palm. Refrigerate for 1 hour, until the filling sets.

  4. Spread with chocolate

    10 min

Melt the chocolate with the oil in a bowl set over a pan of hot water, then spread it over the filling.

  5. Let set and slice

    30 min

Refrigerate for about 30 minutes to set. Cut into 24 bars using a knife dipped in hot water and wiped dry. Store in the refrigerator.

Tip: Cut the chocolate before it hardens completely, or it will crack when sliced. Take the bars out of the refrigerator about 10 minutes before cutting. Read more: How to adjust a recipe for your baking pan
