Grilážky are Slovak no-bake Christmas wafer bars layered with thick caramel made from sugar, butter, and sweetened condensed milk, plus toasted walnuts. Let them rest under weights until the next day before cutting them into neat squares that won't break apart. Spread dark chocolate over the top. Unlike raspberry grilážky, these have a milk-based caramel made with sweetened condensed milk and contain no fruit. One batch makes about 40 squares.

Instructions

Toast the walnuts
5 minCoarsely chop the walnuts and toast them briefly in a dry skillet, stirring constantly, until fragrant. Set aside.
Make the caramel
10 minPour the sugar into a wide, heavy-bottomed saucepan and let it melt over low heat into a golden-brown caramel. Start stirring only once the sugar begins to melt, and watch carefully so it doesn't get too dark and turn bitter.
Add the butter and condensed milk
10 minRemove the saucepan from the heat and carefully stir in the butter; the mixture will foam vigorously. Return to low heat and pour in the sweetened condensed milk a little at a time. The caramel will harden at first, but will melt again as you stir constantly. Cook for 3–5 minutes, until the mixture thickens and a spoon drawn across the bottom leaves a trail that holds briefly.
Spread the filling over the wafers
10 minStir the walnuts into the warm caramel. Spread some filling over the first wafer sheet, place the second sheet on top and spread with filling, then add the third sheet, spread with filling, and cover with the fourth. Work quickly while the mixture is warm. If it thickens as you work, reheat it briefly.
Weigh down and let rest
12 hrCover the wafers with parchment paper and a board, then weigh them down with something such as bags of flour. Leave in a cool place for at least 12 hours so the caramel sets and the wafers soften.
Top with chocolate and slice
20 minMelt the chocolate with the oil over a water bath, spread it over the top wafer, and let set. Dip a sharp knife in hot water and wipe it dry, then cut into squares about 3 cm on each side. Store in an airtight container in a cool place for about 2 weeks.
Tip: Add the sweetened condensed milk a little at a time, only over low heat. If the caramel hardens into a lump, don't add anything; keep stirring and it will melt again.
