Pull pork shoulder apart with two forks after rubbing it with paprika, sugar, garlic, and salt and roasting it covered at 150 °C (300 °F) for about five hours, until fall-apart tender. Pork shoulder works well for pulled pork because it has plenty of fat and connective tissue. Serve it on a roll with coleslaw, such as yogurt coleslaw.

Instructions
Tip: tap a step to mark it as done.
Make the spice paste
5 minPreheat the oven to 150 °C (300 °F). Mix the paprika, sugar, salt, crushed garlic, and black pepper into a thick paste.
Rub the pork
5 minPat the pork shoulder dry with a paper towel and rub the paste all over it. Place it in a roasting pan, pour in the apple juice and vinegar, and cover the pan tightly with a lid or aluminum foil.
Roast
5 hrRoast for about 5 hours, until the meat falls apart and a fork slides in without resistance. Check once during roasting to make sure there is liquid in the bottom of the pan, and add a little water as needed.
Shred the pork
15 minRemove the pork, let it rest for 10 minutes, and shred it with two forks. Skim the fat from the pan juices, then toss the meat with the juices.
Serve
Serve the pork warm on split rolls with coleslaw or pickles.
Tip: Cover the roasting pan tightly so the meat cooks in its own steam, becomes evenly tender, and does not dry out around the edges.
