Zucchini noodles with cheese sauce and herbs are a lighter take on pasta, with strips of fresh zucchini replacing the noodles. Briefly cook the zucchini in butter while the cheese sauce, made with butter, garlic, flour, milk, cream, and Parmesan and seasoned with thyme and oregano, thickens. You can prepare carrot noodles the same way. Serve immediately, sprinkled with parsley.

Instructions
Tip: tap a step to mark it as done.
Melt 15 g of the butter in a saucepan, add the sliced zucchini, and cook until tender, about 3–5 minutes. Set the zucchini aside.
Melt the remaining butter in the saucepan, add the garlic, and sauté for 1–2 minutes. Stir in the flour and cook for 1 minute.
Gradually pour in the milk, stirring constantly, and add the thyme and oregano. Simmer for 2 minutes, then add the cream and Parmesan. Cook until the sauce thickens, and season with salt and pepper.
Stir in the reserved zucchini to coat it with the sauce, and serve immediately, sprinkled with parsley.
Tip: The easiest way to make zucchini noodles is with a vegetable peeler: draw it along the entire length to create long strips. If using older zucchini, leave out the soft, seedy center, which would quickly turn mushy.
