These oven-baked zucchini nuggets are pieces of zucchini coated in flour with Parmesan, egg whites, and breadcrumbs, then baked on a baking sheet instead of fried. Salt the zucchini first and let it sit in a strainer for half an hour to release moisture. Granulated garlic and black pepper season the flour coating. These crispy nuggets are a way to serve zucchini to kids who don't usually care for it.

Instructions
Tip: tap a step to mark it as done.
Peel the zucchini, cut each one in half, then cut each half into 3 pieces. Place in a strainer, sprinkle with salt, and let stand for about half an hour.
After half an hour, rinse the zucchini and remove the excess water. Brush a baking sheet with oil.
Coat the zucchini pieces first in the flour mixed with Parmesan and seasonings, then in the egg whites mixed with 2 tbsp water, and finally in the breadcrumbs.
Arrange the coated pieces on the baking sheet, spray with oil, and bake at 210°C (410°F) for about 35 minutes. Serve.
Tip: Turn the nuggets halfway through baking; otherwise, the bottoms will stay soft. When breading, use one hand for the dry coatings and the other for the egg whites to keep a thick coating from building up on your fingers.
