These zucchini rings with cheese are small fried rings made with grated zucchini, ricotta, and Parmesan. Along with egg and flour, a teaspoon of active dry yeast is added to the batter to help it rise slightly. Spoon mounds of batter into hot oil and make a hole in each one to create doughnut-like shapes. Serve with fresh vegetables and a cream-based dip, or enjoy them on their own for movie night.

Instructions
Tip: tap a step to mark it as done.
Peel, rinse, and dry the zucchini. Grate finely and squeeze out the excess water. In a bowl, mix with the ricotta, grated Parmesan, egg, flour, and salt and pepper to taste. Finally, add the active dry yeast to help the zucchini mixture puff up slightly.
Heat the oil in a skillet and drop in mounds of the mixture using a tablespoon. Use the end of the spoon to make a hole in each mound, forming small doughnut-like rings. Fry on both sides until golden brown.
Drain the fried rings on paper towels. Serve with fresh vegetables or a cream-based dip, or enjoy them on their own for movie night.
Tip: Make the holes fairly large, since the yeasted batter puffs up during frying and small holes may close up. Instead of ricotta, you can use smooth quark, a fresh curd cheese, drained first.
